#1 Khurma:-

Khurma is a Nepali biscuit or cookie that is sugary and salty at the same time. Khurma bread is also considered a special feast of the festival. It is prepared from rice flour and ghee.  For those who like the taste of ghee, khurma bread can be a favorite.

Khurma is used as a pure dish at the festival. Many of us may not have heard the name of this dish as the dish is being replaced by the new modern savory dishes like pizza, Momo, etc.

But these imported dishes cannot give the traditional taste and affection like our own dishes. These tasty khurmas are prepared at home during the festive season of Diwali, Dussehra, and chhath.

They are prepared in various shapes and sizes but the making process and the taste are similar. The process of making khurma may be lengthy but the effort is worthwhile because they can be preserved for many days once you prepare this recipe.

Usually prepared in Terai and by the Marwari people, this savory dish is a must try the recipe on this Diwali. To make khurma, you can take the all-purpose flour and mix the butter in it. Add water and knead it into a dough. Flatten the dough and cut into pieces and shapes you like.

Then deep fry these pieces and dip in hot sugar liquid if you like. To make it salty, you can add salt in the mixture of flour and butter. You can keep the khurma in an airtight container but it can not be kept in the fridge.

#2 Potato Chips:-

Potato chip is thin slices of potato less often – other root crops or various fruits, usually fried in oil ( deep-fried ). As a snack, it is often served with beer. Also, the dip is often served to the chips – thick sauce, into which the chips are dipped.

In the case of preparation from a dried thin layer of mashed potatoes, they can be called potato wafers. If you set fire to the chips, they light up and burn out quickly enough.

This is due to a large amount of oil available on their surface and in the microscopic voids formed during their manufacture. Many dishes that were previously considered normal food have gained undeserved bad fame in recent years.

#3 French Fries:-

The fries or chips, also known as French fries are the potatoes that are prepared by cutting into slices or rodlike shape. And frying in oil heat until golden brown, remove them from oil and then seasoned with salt.

They can be consumed alone or seasoned with ketchup, mayonnaise or other sauces. In this way, they are usually served as an accompaniment to hamburgers and even with main dishes such as pork chops, meatballs, fried chicken, etc.

They are also part of the chorrillana or beef steak typical of Peru.The fries have become one of the most popular dishes worldwide, becoming one of the ten most eaten foods in the world just like pizza or pasta.

The potatoes are cut into sticks. It is possible to wash the fries to remove the starch (this avoids that the fries do not stick together) but we get less crisp fries (it is the starch that brings the crisp fry).

It must be well wrung and wiped to prevent water from turning into steam once in the deep fryer and dissociating the cooking oil. Besides, a surplus of water will lower the temperature of the oil. You can fry them in any vegetable oil you prefer. Nowadays, the fryer is used for preparing the fries.

You can even bake the fries. filled with french fries reduces the temperature of the oil and slows the cooking, moreover, the fries may stick together. Also, it is advisable to cook fries in small quantities. Wipe the fries with a napkin to remove excess oil.

Salting or adding herbs or spices is done immediately after wiping, as long as there is steam, not on the plate. In this case, the salt dissolves better and impregnates the potato during cooling. #4 Bara:-

is a Nepalese ethnic group that was an original resident of the Kathmandu Valley. Their excellent culture, cuisine, architecture, and language still have a strong presence in the capital. Newari Food is a unique subset of Nepalese cuisine. A popular Newari snack bar (also written bada), which looks like thick spicy rice flour. It can be eaten plain, with an egg chopped on top or with buffalo meat.

Bara is made by frying it in oil.  It is known as Wo in the Newari community. Traditionally bara is made from the wet black lentil or kidney beans mashed in the mortar and pestle. Bara is of great importance in the Newari community and it is used in worship and cooked even in banquets.  Every day of Vijaya Dashami bara is offered to God in the morning as the Prasad.

If you are hungry, you can have Baraas alight snack or Nepali Namkeen. It is a lot of fun to make Bara together with family while having time at home.  Bara is the most popular food in the Newari community.  The bara found in hotels can be prepared at home by the usual hard work. Making bara is easier and simpler than you think. You have to soak the black lentil in water one night before cooking.

Then remove the cover of the lentils, grind them in the mixture, add garlic and ginger paste, salt to taste and mix them well. Put some oil in the pan and put the one tablespoon of the mixture in the pan. Spread them and make a round shape.

Flip to another side as the one side turns brown. Bara can be eaten with sauce hot and cold. During Diwali, you can make bara and serve it as a light Namkeen to your guests after tiring them with a sweet dessert.

#5 Nimki:-

Nimki is crunchy savory snack eaten with tea or coffee as a light snack in the Indian Subcontinent. Nimki is shaped ribbon-like strips of pastry which are seasoned with ajwain and cumin seeds (jeera) in pure ghee (clarified butter). It requires approximately 10 minutes to prepare for this recipe and 20 minutes to cook. The appearance, taste, and texture can be tallied to that of samosa pastry.

The name derives from namak (नमक, “salt”) which is the main seasoning for the pastry. The other ingredients include atta flour (whole wheat), maida flour (refined) or semolina and baking powder and baking soda. They can be preserved for several days in the airtight container.

During Diwali when you are tired of coming and preparing and want to have some quick light savory dish. Nimki can be the best option for you. Nimki is available in the market easily and cheap too in comparison to other snacks.

The preparation and cooking process is also simple and affordable. Take out all-purpose flour in a vessel, add oil, salt, and Kalonji to the flour and mix it well, add a little water and make a stiff dough. Cover the dough and keep it for 15-20 minutes, the dough will swell and set.

Later, crush it once again to make it soft. And divide it evenly into two halves and make a circle. Take one circle, flatten it and cut into pieces and deep fry in the heated oil. There you have your nimki for this Diwali.

#6 Samosa chaat:-

As the name suggests, samosas are mashed in a plate to make samosa chaat and then add chickpeas, curd, coriander, mint chutney, tamarind chutney or dry ginger, salt, red chili powder, garam masala. And chaat is made using spices. Often the materials used to make this chaat are easily available in Nepalese homes.

Once you prepare the ingredients, it takes almost no time to make this chaat and this chaat can be served immediately.  Office goers and shopkeepers or anyone can use this chaat as a midday meal.

#7 Potato Sev or Aloo Bhujiya:-

Aloo Bhujia Sev looks very tasty apart from all Namkeen. Different people make Aloo Bhujia Sev namkeen in different ways, like Mixing potatoes and gram flour, Mixing potatoes, gram flour and meth flour or Mixing potato, gram flour, and rice flour.

Potato Bhujia made in every way has different taste but the method of making it is the same. Potato Bhujia can be made from whatever ingredients are available with you.

You can make Aloo Bhujia Sev at home for a light breakfast.  They are very tasty to eat.  You can serve it with tea. First of all, knead the dough.  Now peel the potatoes and grate them.  Add grated potatoes to gram flour. 

Also add red chili powder, turmeric powder, garam masala, salt, and asafoetida.  Mix all the ingredients properly and make a soft dough.  Keep the dough aside for 15 minutes. Grease the dough by applying a little oil on your hands.

Apply a little oil on the hand and break a little dough from the dough to make a long roll and fill it inside the cylinder of the machine.  Put oil in the pan and heat it.  Now pour the sev from the machine in the hot oil, as soon as the foam is removed from the oil and the sevs come to the top, in the same way, flip them and cook it a little. 

As soon as the sev is golden brown, lift it and keep it in a plate.  According to this process, prepare all the sevs. This light Namkeen can be a delicious treat for you and your guests during this Diwali.

#8 Murmure Namkeenor Furandana:-

Alsoknown as puffed rice is an instant and easy to make a snack. The taste of this light-hearted snacks can be enjoyed at any time with a sip of tea or coffee. Whichever you eat, you are going to like the taste of it, puffed rice is a better option as a snack. 

You can add Murmura Namkeen in your menu as a snack to serve evening tea for guests.  Anytime you have a light hunger and want to eat something different, make these snacks quickly and eat.

It does not contain gluten and is easily absorbed by the body due to its low fiber content. It removes excess moisture from the body, which helps to lower blood pressure. Helps strengthen the nervous system. To make this dish, Peel the potatoes and grate them, then fry peanuts, cashews, almonds, raisins and dry coconut.

Heat 2 teaspoons of oil in a pan, add fennel, curry leaves, salt, and all the spices. Add the puffed rice and roast it for 5 minutes on low flame, then add finely chopped and all fried things and serve. This light Namkeen is popular in Nepal and India and is largely consumed by adults and children as the afternoon snack with tea and coffee.

#9 Namkeen Chiura:-

Chiura (Flattened rice or beaten rice) is made by boiling the paddy and pressing it into something moist. It is made salty by mixing it with some other things.  In Nepal, it is eaten with curd. Namkeen Chiura is very easy to make and its biggest feature is that it is liked by everyone.

Put the chiura in a pan and bake it on low heat so that it becomes crisp.  After this, heat oil in another pan and fry peanuts separately in it. Now heat about three tablespoons of oil in a large pan and add mustard seeds, cumin seeds, sweet neem, and green chilies and fry them.  Then add poppy seeds and other spices.

Add fried chiura to it and mix well.  Turn off the gas, add all the fried ingredients and mix well. After some cooling adds salt and sugar and mixes properly.  If you want to bring a sour taste to the chivda, then add a spoonful of mango powder or a pinch of tartar.  When it is completely cooled, store it in an airtight compartment.

Chatamari is another favorite Newari appetizer that is very popular in Kathmandu. It was called “Nepalese pizza,” but that’s just because it’s cool. Chathamari is creamy rice (thinner than bars), which is cooked with various salty fillings, such as chopped onions, fresh coriander, minced meat, egg, chili, and various spices.

This bread is specially made in the Newar community of Kathmandu valley and it is eaten at special festivals and festivals. Chatemari in Newari means “bread made of rice”.  It is made by putting meat, garlic onions, eggs and other spices in a thin loaf of rice.
